Green Smoothie

▪️ My staple green smoothie is really high in good fats, vitamins and minerals and really satisfies 👌🏼 It also kicks any sugar cravings to the curb. I make one for hubby and I to have most days if not every second day. One of these is fantastic to drink if you’re breastfeeding! Once again I don’t measure ingredients exactly so will guesstimate for you! Anyway my smoothie goes a little something like this:

3 lady finger bananas

2 handfuls spinach leaves

1/2 – 3/4 avocado

1 1/2 cups water

3/4 cup milk

270ml can of premium coconut cream (100% coconut cream content)

1 teaspoon spirulina

3 tablespoons LSA (linseed, sunflower and almond)

2 tablespoons RAW choc/macadamia protein powder

1 tablespoon Tony Sfeirs choc protein powder

▪️ Mix all ingredients in blender. This makes about 1.5 litres so I put excess in jars for morning tea the next day also, which is helpful if I’m on the go or need to grab quickly and don’t get the chance to make it. For example I always have one pre made to take with me to my Muay Thai training session to have straight afterwards as I feel so depleted and fatigued so it’s a great pick me up. This and a handful of nuts helps see me through to lunch time.

Banana, Buckwheat and Coconut Pancakes

▪️ Everyone loves pancakes! They are a perfect weekend breakfast or if you’re like me you’ll even have them for lunch 😝 I made this recipe up as I was challenged by hubby when he told me he’d never tried a “clean healthy” pancake that actually tasted nice. He and I have had some dense and dry ones before and they were pretty awful. So I got a bowl out and just winged it as I went, but recorded what I put in. I’ve also used wholemeal spelt flour for this recipe (the photo above was actually from when I used spelt) however for those gluten free people buckwheat is the way to go! I was determined to impress him and change his mind, and with these pancakes I did 🙌🏼

3/4 cup buckwheat flour
1/2 cup coconut flour
1/2 cup desiccated coconut
1 teaspoon baking powder
I large banana, mashed
1 1/2 cup milk (I use Unhomogenised cows milk)
2 eggs
2 tablespoons coconut oil
1 teaspoon vanilla extract
Pinch salt
Dash honey

Mix together vigorously. Cook on low to medium heat. Serve hot topped with berry compote, maple syrup and coconut yogurt. Makes 6 large pancakes 🙌🏼😍
